Wedge Salad Re-Invented!
Was it the Fifties or the Sixties when the fanciest salad in a restaurant was The Wedge? Usually a wedge of crispy Iceberg Lettuce with Thousand Island Dressing and maybe a few Cherry Tomatoes. Then chefs got more daring and served Wedge of Romaine Lettuce with Bleu Cheese Dressing, Bacon or even Baby Shrimp. It was a definite move up from the ordinary pale lettuce and Italian Dressing!
Our new favorite first course is The Wedge Re-Invented! Adorable baby Iceberg Lettuce with Pancetta, Bleu Cheese Crumbles and Ripe Grape Tomatoes. Some really creative farmer figured out how to grow and ship these perfect little heads of lettuce – amazing!
